Shepherds Pie, a Family Favorite Comfort Food. Collab with McMurry Hand Forged

One of our families favorite meals in the cool months in shepherds pie. It’s such a comfort homey food, but I love that I can pack a lot of protein and veggies in it too so it’s a full meal all in one. Everyone in the family loves it!!

I had never tried my hand at it until we did a meal kit service 2 years ago and it was a meal provided. It’s one of those dishes that seems like it takes a lot of time and steps but really it’s not!

It’s great for days you have leftover mashed potatoes, ground beef, or mixed frozen or canned veggies lying around. And I love that it makes plenty so we bave it as leftovers, in our family.

Now, If you’ve been around a while you know I love my cast iron pans. The set I have now, we received as a wedding present, so they’re 5 years old.

RECIPE: Serves 8 (GF)

1 Tbsp oil

1lb potatoes

3 Tbsp ketchup

1lb Ground beef

1 1/2C mixed veggies/ frozen

1/2 tsp onion powder

1/2 tsp garlic salt

1/2 tsp italian seasoning

1 1/2C beef broth

1/2 Tbsp worcestershire sauce

1 Tbsp cornstarch

1/3 stick of butter

1C cheddar cheese

• dash of milk

• pinch of salt

Start by pouring water in a big pot just enough to cover potatoes, then cut up potatoes and place in the pot. I prefer the peels, you can peel beforehand if desired. Cover with lid, and boil. (I prefer to use my instapot due to the time saver it is but either way works!)

Meanwhile, start your meat mixture by pouring your oil in your skillet and brown the ground beef on medium heat. Then add in your seasonings, beef broth, Worcestershire sauce, your ketchup, and mix evenly. Next, use a little ladel or measuring cup and take a bit of that broth in it and mix in your cornstarch till it’s a good consistency. Then pour that in around your dish and mix as you pour. Lastly, add in your veggies and give it a good stir for everything to be coated well.

Once your beef veggie mixture is prepared you can turn it to low and let it simmer, stirring occasionally.

When your potatoes are done- (poke a hole and they will fall apart), drain them and add in the butter first and distribute. Then add a dash of milk. Mash by hand or with a hand mixer. Add a pinch of salt, but nothing more then that as your meat mixture has it in already. Once the texture is to your preference, spread the mashed potatoes onto your beef/veggie mix. Top with shredded cheese. Bake at 350 for 40 mins. I taste test the middle to check for heat as well as to ensure the veggies are cooked through.
