If you know me, then you really know that I’m a measure by heart kind of cook in the kitchen.
I usually use a recipe once and then unless it’s a very specific ratio recipe then I may not use it again. lol
But that being said, I love being in my kitchen and I love cooking and trying new recipes, especially healthy ones!

So I had to share the salad recipe that has been on repeat for me the last two months.
I have to give credit it to my mom because she came up with this, made it for me and then I came home and had to re-create it.❤️
If you love Thai food, and especially spring rolls, this will be one of your favorite salads ever.
All you need for INGREDIENTS are:
Lettuce (whatever is your favorite kind)
Mint
Cucumber
Shredded Carrot
Green onion
Cooked chicken
Cashew butter
Coconut amino’s
Maple syrup or honey
Mustard, yellow or Dijon
Garlic
Ginger
White vinegar or Apple cider vinegar
Salt and pepper
Sesame seeds (optional)
Start with cutting up your lettuce, green onion, the chicken, cucumber- sliced, or diced, whatever you prefer and shredded carrot and place in a bowl.
For the dressing:
Put in a little jar or mixing bowl about 2 tablespoons of cashew butter, 2 tablespoons of coconut amino’s, 1 tablespoon of maple syrup/honey, 1 teaspoon of mustard, 1 teaspoon of garlic and ginger, half a teaspoon of vinegar, and salt and pepper to taste.
Put a lid on and shake it, for everything to get mixed, or use a mixer.
Once fully combined pour it over your salad and top of sesame seeds if desired.
Mix it around for the dressing to cover and dig in.
It is delicious!
